Juniper Ale

My shout out to the evergreen forests of the American Southwest. The first beer BSB has made off the script.

Fermentables: Gold Malt Extract, Briess Caramel #10
Additions: Chinook 1oz 60min, 1oz 1min; juniper berries 1oz for 15 minutes while wort is in the cold bath.

The juniper ale was a big hit. Very high chinook hop profile gave it more of an IPA rather than the southwestern forest sense of pale I was originally going for. I will definitely remake this beer but need to get some adjustments made in the hop department. I was thinking of switching to cascade and perhaps cutting out the specialty grains altogether.

Just got back from the Midwest Brewer with some new ideas.

6 lbs gold malt extract

no specialty grains

1 oz pellets cascade at 60

1 oz plugs cascade dry hopped

I'm going to dry hop the ale with juniper berries and the cascade plugs. Should be interesting. I think for this one, I'll want to let it sit in the keg for a few days to enable secondary fermentation.
